🍽️ Chinese Cabbage Salad with Fruit

Ingredients
- 250 g Napa Cabbage
- 2 stalks Celery
- 1 tart Apple
- Juice of one Lemon
- 2 Oranges
- Salt
- Pepper (from the mill)
- 2 tbsp Sunflower Oil
- 75 g Crème fraîche
- 2 slices Whole Wheat Toast
- 1 tbsp Butter
- Parsley
Instructions
- 1. Wash the Chinese cabbage thoroughly and remove the tough stems. Then cut the vegetable crosswise through the center into thin strips.
- 2. Wash the celery stalks and clean them. Cut the vegetable into diagonal pieces that are about 10 centimeters long.
- 3. Wash the apple, quarter it, and remove the core. Cut the pieces into wedges and drizzle them lightly with lemon juice to prevent browning.
- 4. Peel the oranges with a sharp knife similar to an apple and remove all white pith. Carefully cut the segments out along the membranes. Squeeze the remaining orange peels to catch the juice.
- 5. Whisk the collected orange juice, the remaining lemon juice, salt, pepper, oil, and Creme Fraiche into a creamy salad dressing. Finally, adjust the seasoning of the sauce to taste.
- 6. Cut the toast slices into small cubes. Fry these in a pan with hot butter until golden brown and crispy on all sides.
- 7. Arrange the prepared salad ingredients as desired on small bowls. Add a spoonful of the salad dressing on top and garnish with fresh parsley and the toasted bread cubes.
