  1. 1. Wash the Chinese cabbage thoroughly and remove the tough stems. Then cut the vegetable crosswise through the center into thin strips.
  2. 2. Wash the celery stalks and clean them. Cut the vegetable into diagonal pieces that are about 10 centimeters long.
  3. 3. Wash the apple, quarter it, and remove the core. Cut the pieces into wedges and drizzle them lightly with lemon juice to prevent browning.
  4. 4. Peel the oranges with a sharp knife similar to an apple and remove all white pith. Carefully cut the segments out along the membranes. Squeeze the remaining orange peels to catch the juice.
  5. 5. Whisk the collected orange juice, the remaining lemon juice, salt, pepper, oil, and Creme Fraiche into a creamy salad dressing. Finally, adjust the seasoning of the sauce to taste.
  6. 6. Cut the toast slices into small cubes. Fry these in a pan with hot butter until golden brown and crispy on all sides.
  7. 7. Arrange the prepared salad ingredients as desired on small bowls. Add a spoonful of the salad dressing on top and garnish with fresh parsley and the toasted bread cubes.
