🍽️ Spicy Chili Aioli with Zesty Lemon

Ingredients
- 1 chili pepper
- 3 garlic cloves
- 2 egg yolks
- salt
- 200 ml olive oil
- lemon juice
- cayenne pepper
- 1 handful pineapple sage (5 g each)
Instructions
- 1. Rinse the chili peppers under running water.
- 2. Pat the peppers dry with a kitchen towel.
- 3. Cut the chili peppers in half lengthwise.
- 4. Remove the seeds and white pith from the peppers.
- 5. Finely chop the flesh of the chili.
- 6. Peel the garlic cloves.
- 7. Press the garlic through a garlic press.
- 8. Place the egg yolk in a large mixing bowl.
- 9. Add the mustard to the bowl.
- 10. Sprinkle a pinch of salt over the mixture.
- 11. Add the finely chopped chili to the bowl.
- 12. Beat the ingredients with a mixer or whisk.
- 13. Continue stirring until the mixture turns white and creamy.
- 14. Add the oil drop by drop to the mixture.
- 15. Keep beating continuously.
- 16. Wait until each amount of oil is fully incorporated.
- 17. Then add the oil slowly in a thin stream.
- 18. Continue beating until the aioli is ready.
- 19. Add lemon juice to the chili aioli.
- 20. Season with a little more salt.
- 21. Sprinkle cayenne pepper over it.
- 22. Taste the aioli to finish.
- 23. Serve the aioli garnished with pineapple sage.
