  1. 1. Rinse the chili peppers under running water.
  2. 2. Pat the peppers dry with a kitchen towel.
  3. 3. Cut the chili peppers in half lengthwise.
  4. 4. Remove the seeds and white pith from the peppers.
  5. 5. Finely chop the flesh of the chili.
  6. 6. Peel the garlic cloves.
  7. 7. Press the garlic through a garlic press.
  8. 8. Place the egg yolk in a large mixing bowl.
  9. 9. Add the mustard to the bowl.
  10. 10. Sprinkle a pinch of salt over the mixture.
  11. 11. Add the finely chopped chili to the bowl.
  12. 12. Beat the ingredients with a mixer or whisk.
  13. 13. Continue stirring until the mixture turns white and creamy.
  14. 14. Add the oil drop by drop to the mixture.
  15. 15. Keep beating continuously.
  16. 16. Wait until each amount of oil is fully incorporated.
  17. 17. Then add the oil slowly in a thin stream.
  18. 18. Continue beating until the aioli is ready.
  19. 19. Add lemon juice to the chili aioli.
  20. 20. Season with a little more salt.
  21. 21. Sprinkle cayenne pepper over it.
  22. 22. Taste the aioli to finish.
  23. 23. Serve the aioli garnished with pineapple sage.
