  1. 1. Rinse the chili peppers under running water.
  2. 2. Cut half of the pods in half lengthwise.
  3. 3. Leave the other half of the pods whole.
  4. 4. Add the chili pods along with the green and black peppercorns to the oil.
  5. 5. Seal the container tightly.
  6. 6. Store it in a cool, dark place for about 3 weeks.
  7. 7. Pour the finished oil through a fine sieve to remove the solid ingredients.
  8. 8. Transfer the oil into a bottle or a screw-top jar for storage.
