🍽️ Chili-Vanilla Oil

Ingredients
- 1 l corn germ oil
- 15 chili peppers
- 2 tbsp cayenne pepper
- 1 vanilla pod (slit open)
Instructions
- 1. Finely chop the chili peppers. Place them in a pot with the oil and warm the mixture over very low heat for about 10 minutes. Remove the pot from the heat and let the oil cool down. Once cooled, stir in the cayenne pepper and the vanilla pod.
- 2. Cover the pot and let the oil infuse for a full day. Then, strain the oil through a sieve into a clean, sterile jar. This oil is perfect for searing lamb or simply spreading on toasted baguette.
