🍰 Creamy Chili-Chocolate Sorbet with Orange Compote

Ingredients
- 70 g dark chocolate (70% cocoa content)
- 1 small dried chili pepper
- 50 g cane sugar
- 40 g cocoa powder (2 tbsp)
- 2 tbsp Amaretto (or almond syrup)
- 125 g kumquat
- 1 large orange
- 40 g mild honey (2 tbsp)
- 0.5 vanilla pod
Instructions
- 1. Finely chop the chocolate.
- 2. Slice the chili pepper lengthwise.
- 3. Shake out the seeds from the pod.
- 4. Crumble the empty pod into small pieces.
- 5. Add sugar, cocoa powder, and 250 milliliters of water to a pot.
- 6. Whisk the ingredients well.
- 7. Bring the mixture to a boil over medium heat.
- 8. Remove the pot from the heat.
- 9. Stir in the chopped chocolate.
- 10. Stir in the chili pieces.
- 11. Add the amaretto or almond syrup.
- 12. Stir everything well.
- 13. Pour the mixture into an ice cream maker.
- 14. Freeze the mixture for about 20 minutes.
- 15. Rinse the kumquats under hot water.
- 16. Slice the kumquats thinly.
- 17. Remove the seeds from the slices.
- 18. Halve the orange.
- 19. Squeeze the orange.
- 20. Measure out 100 milliliters of orange juice.
- 21. Slice the vanilla pod lengthwise.
- 22. Scrape out the seeds from the pod.
- 23. Briefly bring the vanilla seeds and honey to a boil.
- 24. Add the kumquats.
- 25. Stir in the orange juice.
- 26. Bring the mixture back to a boil.
- 27. Simmer the mixture in the open pot over low heat for 10 minutes.
- 28. Transfer the compote mixture to a bowl.
- 29. Let the compote mixture cool.
- 30. Scoop the chocolate sorbet with an ice cream scoop.
- 31. Serve the ice balls together with the cooled compote.
