  1. 1. Peel the onion and the garlic clove.
  2. 2. Chop both ingredients very finely.
  3. 3. Heat some oil in a pot.
  4. 4. Add the minced meat.
  5. 5. Fry the meat crumbly over high heat within 3 minutes.
  6. 6. Add the chopped onion and garlic.
  7. 7. Fry the mixture for another 5 minutes.
  8. 8. Stir in the tomato paste.
  9. 9. Fry the tomato paste for 2 minutes.
  10. 10. Season the mixture with sugar, cayenne pepper, the orange zest, salt, oregano, and pepper.
  11. 11. Stir in the tomatoes.
  12. 12. Let the chili simmer covered for about 30 minutes.
  13. 13. Add a little water if the sauce becomes too dry.
  14. 14. Rinse the black beans and corn in a sieve.
  15. 15. Let them drain well.
  16. 16. Add them to the chili.
  17. 17. Let everything simmer for another 10 minutes over low heat.
  18. 18. Wash the cilantro.
  19. 19. Shake it dry.
  20. 20. Pick off the leaves.
