Ingredients
- 2 chili peppers
- 2 onions
- 2 stalks celery
- 1 carrot
- 3 tbsp olive oil
- 650 g ground beef
- 2 tbsp tomato paste
- 1 garlic clove
- 400 ml meat broth
- 400 g kidney beans (can; drained weight)
- 1 small, red onion
- 100 g cheddar
- 4 sprigs flat-leaf parsley
- salt
- cayenne pepper
- 80 g sour cream
Instructions
- 1. Rinse the chili peppers under running water.
- 2. Remove the seeds and dice the chili finely.
- 3. Peel the onions.
- 4. Cut the onions into small cubes.
- 5. Clean the celery and wash it.
- 6. Remove the fibrous strings from the celery stalks.
- 7. Peel the carrot.
- 8. Dice the carrot finely.
- 9. Heat the olive oil in a large pot.
- 10. Add the onions and chili to the pot.
- 11. Sauté the vegetables over medium heat.
- 12. Add the minced meat to the pot.
- 13. Break up the meat into small pieces with a spoon.
- 14. Fry the meat for five minutes.
- 15. Add the celery and carrots.
- 16. Fry the vegetables briefly.
- 17. Stir in the tomato paste.
- 18. Peel the garlic.
- 19. Chop the garlic finely.
- 20. Add the garlic to the meat.
- 21. Fry everything for about one minute.
- 22. Deglaze the dish with the broth.
- 23. Cover the pot with a lid.
- 24. Let the mixture simmer for forty minutes.
- 25. Stir the chili occasionally while cooking.
- 26. Rinse the beans in a colander.
- 27. Let the beans drain well.
- 28. Add the beans to the chili.
- 29. Let the mixture simmer for another twenty minutes.
- 30. Peel the red onion for the garnish.
- 31. Cut the red onion into cubes.
- 32. Cut the cheese into thin sticks.
- 33. Wash the parsley.
- 34. Shake the parsley dry.
- 35. Pick the parsley leaves off the stems.
- 36. Season the chili with salt to taste.
- 37. Season the chili with cayenne pepper to taste.
- 38. Serve the chili con carne.
- 39. Add sour cream as a garnish.
- 40. Add parsley as a garnish.
- 41. Add cheddar cheese as a garnish.
- 42. Add onion cubes as a garnish.
