  1. 1. Cut the bread into coarse cubes.
  2. 2. Place the bread cubes in a little water for about 15 minutes.
  3. 3. Make sure the bread becomes soft but not mushy.
  4. 4. Peel the garlic.
  5. 5. Chop the garlic finely.
  6. 6. Add the garlic to the bread along with the eggs and parsley.
  7. 7. Mix everything with a fork.
  8. 8. Stir until a uniform, moldable mass is formed.
  9. 9. Season the mixture with salt and pepper.
  10. 10. Heat some oil in a pan.
  11. 11. Take one tablespoon of the mixture at a time.
  12. 12. Place small fritters portion by portion into the hot pan.
  13. 13. Flatten the fritters.
  14. 14. Fry the fritters on each side for 2 to 3 minutes until golden brown.
  15. 15. Place the finished fritters on kitchen paper.
  16. 16. Drain the excess oil.
  17. 17. Serve the fritters garnished with freshly chopped parsley.
