🍽️ Fresh Chicory Salad with Apples, Nuts, and Blue Cheese

Ingredients
- 3 chicory (2 of them red)
- 2 apples
- 100 g Gorgonzola (45 % fat in dry matter)
- 50 g walnut kernels
- 150 g yogurt (1.5 % fat)
- 1 tsp hot mustard
- 4 tbsp lemon juice
- salt
- pepper
Instructions
- 1. Cut off the tough bottom ends of the chicory.
- 2. Thoroughly wash the chicory leaves under running water.
- 3. Carefully separate the individual leaves from each other.
- 4. Wash the apples under running water.
- 5. Cut the apples in half.
- 6. Remove the core from the apple halves.
- 7. Cut the apple flesh into small, bite-sized pieces.
- 8. Cut the blue cheese into small cubes.
- 9. Coarsely chop the walnuts.
- 10. Put the yogurt into a small bowl.
- 11. Add the mustard to the yogurt.
- 12. Add the lemon juice to the yogurt mixture.
- 13. Season the mixture with salt.
- 14. Season the mixture with pepper.
- 15. Whisk the yogurt, mustard, lemon juice, salt, and pepper together well.
- 16. Put the chicory leaves into a large salad bowl.
- 17. Add the apple pieces to the salad bowl.
- 18. Add the chopped walnuts to the salad bowl.
- 19. Mix the chicory leaves, apples, and walnuts in the bowl.
- 20. Distribute the cheese cubes on top of the salad.
- 21. Serve the dressing separately in a small dish.
