  1. 1. Rinse the chicory under running water.
  2. 2. Cut out the hard base of the chicory in a wedge shape.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Add the chicory stalks to the boiling water for 3 minutes.
  5. 5. Remove the chicory from the water and rinse it immediately with cold water.
  6. 6. Let the chicory drain well in a colander.
  7. 7. Melt the butter in a pot over medium heat.
  8. 8. Stir the flour into the butter and let the mixture sweat briefly.
  9. 9. Pour the milk slowly into the pot.
  10. 10. Stir constantly until the sauce is smooth and thick.
  11. 11. Add the cheese to the hot sauce.
  12. 12. Let the cheese melt completely over low heat.
  13. 13. Season the sauce with salt and pepper to taste.
  14. 14. Grease a baking dish with some butter.
  15. 15. Wrap each chicory stick with a piece of ham.
  16. 16. Place the ham rolls side by side in the baking dish.
  17. 17. Pour the cheese sauce evenly over the rolls.
  18. 18. Preheat the oven to 200 degrees.
  19. 19. Bake the dish for 15 minutes in the preheated oven.
