🥤 Chia pudding with berry smoothie

Ingredients
- 0.5 vanilla pod
- 200 g soy yogurt alternative
- 200 ml almond drink (almond milk)
- 4 tbsp maple syrup
- 1 pinch salt
- 50 g chia seeds
- 350 g berries (blackberries, raspberries, blueberries)
- 1 organic orange (zest and juice)
- 60 g basic muesli mix (4 tbsp)
- 15 g chopped pistachio kernels (1 tbsp)
Instructions
- 1. Split the vanilla pod lengthwise and scrape out the seeds with a knife. Mix soy yogurt, almond milk, 3 tablespoons of maple syrup, the vanilla seeds, a pinch of salt, and the chia seeds well in a bowl. Cover the bowl and let the mixture swell for at least 2 hours.
- 2. Wash the berries and set aside 100 grams for decoration. Put the rest of the berries, the orange zest, and the orange juice into a blender. Add the remaining maple syrup and 3 to 4 tablespoons of water. Blend everything finely on high speed.
- 3. Stir the chia pudding well afterwards and fill it into glasses. Pour the smoothie on top of the chia pudding. Distribute the reserved berries on the glasses and sprinkle the muesli mix and the chopped pistachios over it.
