🍽️ Chia Poppy Seed Crescents

Ingredients
- 6 g chia seeds (1 tbsp)
- 25 g coconut oil
- 30 g applesauce (unsweetened; 2 tbsp)
- 30 g almond butter (2 tbsp)
- 45 g rice syrup (3 tbsp)
- 95 g spelt whole wheat flour
- 75 g ground almond kernels
- 1 pinch salt
- 1 tsp ground vanilla
- 10 g ground poppy seeds (1 tbsp)
- 10 g powdered sugar from erythritol (1 tbsp)
Instructions
- 1. Put the chia seeds into a bowl.
- 2. Add 3 tablespoons of water.
- 3. Stir the mixture well.
- 4. Let the chia seeds swell for 10 minutes.
- 5. Take your time for the dough in the meantime.
- 6. Put coconut oil, almond butter, apple puree, rice syrup, flour, and almonds into a large bowl.
- 7. Stir all ingredients vigorously together.
- 8. Form a firm dough.
- 9. Add the swollen chia pudding to the dough.
- 10. Season with a pinch of salt.
- 11. Add vanilla.
- 12. Shape the dough into a firm ball.
- 13. Wrap the dough ball in plastic wrap.
- 14. Place the dough in the refrigerator for 1 hour.
- 15. Divide the dough into small pieces after the cooling time.
- 16. Shape each piece into a roll.
- 17. Point the ends of the rolls.
- 18. Bend the rolls into the typical crescent shape.
- 19. Place the crescents on a baking sheet lined with baking paper.
- 20. Preheat the oven to 150 °C (convection 130 °C; gas: level 1–2).
- 21. Bake the crescents for 15 minutes.
- 22. Mix ground poppy seeds with powdered sugar in a small bowl.
- 23. Take the crescents out of the oven.
- 24. Roll the still warm crescents in the poppy seed-sugar mixture.
