🍳 Chia Elderberry Jam

Ingredients
- 500 g elderberries
- 0.5 organic lemon
- 3 tbsp chia seeds
- 2 tbsp honey
Instructions
- 1. Thoroughly wash the elderberries under running water.
- 2. Let the berries drain well in a sieve.
- 3. Carefully pick the individual berries off the tough stems.
- 4. Wash the lemon under hot water and pat it dry with a cloth.
- 5. Grate about one teaspoon of the outer peel of the lemon.
- 6. Place the elderberries in a pot.
- 7. Lightly mash the berries using a potato masher.
- 8. Add the lemon zest to the berry mixture.
- 9. Bring the mixture to a boil while stirring constantly.
- 10. Remove the pot from the heat source immediately.
- 11. Let the berry mixture cool down for about five minutes.
- 12. Stir the honey well into the cooled mixture.
- 13. Add the chia seeds and stir them in well as well.
- 14. Let the jam sit for about 30 minutes until it sets.
- 15. Stir the mixture occasionally during the waiting time.
- 16. Fill the finished jam into clean jars.
- 17. Store the jars in the refrigerator.
- 18. Consume the jam as soon as possible.
