  1. 1. Finely chop 30 grams of the pistachios and mix them in a bowl with 2 tablespoons of chia seeds. Set aside.
  2. 2. Drain the chickpeas. Peel the garlic and onion and cut each into quarters. Peel, wash and finely grate the carrot. Wash the herbs, shake them dry and pick off the leaves. Set aside half of the mint.
  3. 3. Put the chickpeas, onion, garlic, carrot, herbs, remaining pistachios and chia seeds into a bowl. Puree everything finely using a hand blender. Season with salt and pepper.
  4. 4. Form about 16 balls from the mixture. Roll them in the chia-pistachio mixture and place them on a baking sheet lined with baking paper. Bake them in the preheated oven at 220 degrees Celsius conventional heat (fan 200 degrees; gas: level 3–4) for 15 to 20 minutes.
  5. 5. Finely chop the reserved mint. Stir together yogurt, lemon juice and the mint. Season with salt and pepper.
  6. 6. Take the falafel out of the oven. Drizzle with the yogurt dressing and serve.
