🍰 Cheesecake with Berry Sauce

Ingredients
- 180 g Oat flakes (-cookies)
- 110 g Butter
- 45 g coarse oat flakes
- 0.5 tsp vanilla powder
- 800 g cream cheese (quarter-fat; 10 % fat in dry matter)
- 200 g sour cream
- 100 g whole cane sugar
- 4 eggs (size M)
- 40 g cornstarch
- 200 g berry mix
Instructions
- 1. Lay out a clean kitchen towel.
- 2. Place the cookies inside the towel.
- 3. Crush the cookies into fine crumbs using a rolling pin.
- 4. Melt the butter in a small saucepan over low heat.
- 5. Mix the melted butter with the crumbs and the oat flakes.
- 6. Line a springform pan with baking paper.
- 7. Fill the cookie mixture into the pan.
- 8. Press the mixture down firmly.
- 9. Stir vanilla powder, cream cheese, sour cream, and cane sugar until smooth.
- 10. Stir the eggs into the mixture one by one.
- 11. Fold in the starch briefly.
- 12. Pour the filling over the cookie base.
- 13. Preheat the oven to 180 °C (convection 160 °C; gas: level 2–3).
- 14. Bake the cake for 1 hour.
- 15. After baking, loosen the cheesecake from the edge with a knife.
- 16. Let the cake cool.
- 17. Wash the berries.
- 18. Clean the berries.
- 19. Sort the berries.
- 20. Cut the berries into smaller pieces.
- 21. Puree the berries.
- 22. Serve the puree as a sauce with the cake.
