🍰 Fruity Cheesecake in a Glass

Ingredients
- 1 mango
- 200 g strawberries
- 1 lemon
- 2 tbsp honey
- 100 g almonds
- 10 dates (Soft)
- 125 g mascarpone
- 125 g low-fat quark
- 1 vanilla pod (seeds)
- mint
Instructions
- 1. Rinse the mango, strawberries, and lemon under running water.
- 2. Peel the mango if it still has skin.
- 3. Cut the mango and strawberries into small cubes.
- 4. Place the fruit into a bowl.
- 5. Squeeze the lemon to extract the juice.
- 6. Add half of the lemon juice and one tablespoon of honey to the fruit.
- 7. Mix the ingredients thoroughly.
- 8. Let the fruit mixture sit for ten minutes.
- 9. Finely chop the almonds.
- 10. Roast the almonds in a pan without fat until they smell fragrant.
- 11. Remove the pan from the heat and let the almonds cool down briefly.
- 12. Pit the dates if necessary.
- 13. Mash the dates with a fork.
- 14. Mix the mashed dates with the cooled almonds.
- 15. Fill the almond-date mixture into the four glasses.
- 16. Whisk the mascarpone and skimmed quark cheese in a separate bowl.
- 17. Add the remaining lemon juice, honey, and the seeds of one vanilla pod to the quark mixture.
- 18. Mix the cream well until it is smooth.
- 19. Layer the quark cream on top of the almond-date base in the glasses.
- 20. Wash the mint and shake it dry.
- 21. Pluck the mint leaves from the stems.
- 22. Place the marinated fruit on the cheesecake shortly before serving.
- 23. Garnish the dessert with a few fresh mint leaves.
