  1. 1. Rinse the mango, strawberries, and lemon under running water.
  2. 2. Peel the mango if it still has skin.
  3. 3. Cut the mango and strawberries into small cubes.
  4. 4. Place the fruit into a bowl.
  5. 5. Squeeze the lemon to extract the juice.
  6. 6. Add half of the lemon juice and one tablespoon of honey to the fruit.
  7. 7. Mix the ingredients thoroughly.
  8. 8. Let the fruit mixture sit for ten minutes.
  9. 9. Finely chop the almonds.
  10. 10. Roast the almonds in a pan without fat until they smell fragrant.
  11. 11. Remove the pan from the heat and let the almonds cool down briefly.
  12. 12. Pit the dates if necessary.
  13. 13. Mash the dates with a fork.
  14. 14. Mix the mashed dates with the cooled almonds.
  15. 15. Fill the almond-date mixture into the four glasses.
  16. 16. Whisk the mascarpone and skimmed quark cheese in a separate bowl.
  17. 17. Add the remaining lemon juice, honey, and the seeds of one vanilla pod to the quark mixture.
  18. 18. Mix the cream well until it is smooth.
  19. 19. Layer the quark cream on top of the almond-date base in the glasses.
  20. 20. Wash the mint and shake it dry.
  21. 21. Pluck the mint leaves from the stems.
  22. 22. Place the marinated fruit on the cheesecake shortly before serving.
  23. 23. Garnish the dessert with a few fresh mint leaves.
