🍽️ Cheddar Wraps with Tomato Spread

Ingredients
- 1 onion
- 1 garlic clove
- 4 tomatoes
- 40 g dried tomatoes
- 1 tbsp olive oil
- salt
- pepper
- 1 pinch cayenne pepper
- 4 whole wheat tortilla wraps
- 240 g cheddar (8 slices; 50% fat in dry matter)
Instructions
- 1. Peel the onion and the garlic.
- 2. Chop the onion and the garlic very finely.
- 3. Dip the fresh tomatoes briefly into boiling water.
- 4. Remove the tomatoes immediately and rinse them with cold water.
- 5. Peel the skin off the fresh tomatoes.
- 6. Cut the fresh tomatoes into quarters.
- 7. Remove the core from the tomatoes.
- 8. Dice the fresh tomatoes.
- 9. Finely chop the dried tomatoes.
- 10. Heat the olive oil in a pot.
- 11. Sauté the onions and the garlic in the oil.
- 12. Cook the onions and the garlic until they are soft and translucent.
- 13. Add the fresh tomato cubes to the pot.
- 14. Add the chopped dried tomatoes to the pot.
- 15. Let the tomato mixture simmer for 10 minutes over low heat.
- 16. Season the mixture with salt.
- 17. Season the mixture with pepper.
- 18. Season the mixture with cayenne pepper.
- 19. Heat a pan without additional fat.
- 20. Warm the tortilla wraps in the pan on one side for about 30 seconds.
- 21. Warm the tortilla wraps in the pan on the other side for about 30 seconds.
- 22. Place the warm wraps on your work surface.
- 23. Place the cheese slices on the wraps.
- 24. Spread the tomato mixture over the cheese slices.
- 25. Roll the wraps tightly.
- 26. Secure the wraps with wooden skewers.
- 27. Serve the wraps with a rocket salad.
