  1. 1. Thoroughly wash the mushrooms.
  2. 2. Trim the stems off the mushrooms.
  3. 3. Place the mushroom caps into a large bowl.
  4. 4. Peel the garlic.
  5. 5. Finely chop the garlic.
  6. 6. Mix the chopped garlic with ginger, lemongrass, soy sauce, and sesame oil in a small container.
  7. 7. Pour the garlic marinade over the mushrooms in the bowl.
  8. 8. Toss the mushrooms well to ensure they are evenly coated with the marinade.
  9. 9. Let the mushrooms marinate for about 4 hours.
  10. 10. Turn the mushrooms occasionally during the marinating time to help them absorb the flavors.
  11. 11. Wash the chili pepper under running water.
  12. 12. Cut the chili pepper in half lengthwise.
  13. 13. Remove the seeds from the chili pepper.
  14. 14. Finely chop the deseeded chili pepper.
  15. 15. Peel the second garlic clove.
  16. 16. Finely chop this garlic as well.
  17. 17. Gently warm the chopped chili and garlic in a pan with the peanut butter.
  18. 18. Stir in lime juice, soy sauce, and sesame oil into the warm peanut butter mixture.
  19. 19. Add the coconut milk and stir the sauce until smooth.
  20. 20. Finally, season the sauce to taste with salt and pepper.
  21. 21. Remove the marinated mushrooms from the marinade.
  22. 22. Thread four mushrooms onto each skewer.
  23. 23. Grill the skewers until golden brown on all sides.
  24. 24. Brush the skewers occasionally with the remaining marinade while grilling.
  25. 25. Alternatively, heat some oil in a pan and fry the skewers in it until golden brown.
