🍽️ Marinated Mushroom Skewers with Peanut Chili Dip

Ingredients
- 32 medium same-size button mushrooms
- 2 garlic cloves
- 1 tbsp finely chopped ginger
- 1 tbsp finely chopped lemongrass
- 3 tbsp soy sauce
- 3 tbsp sesame oil
- neutral oil
- 1 red chili pepper
- 1 garlic clove
- 6 tbsp peanut butter (with chunks)
- 2 tbsp lime juice
- 6 tbsp soy sauce
- 4 tbsp sesame oil
- 200 ml coconut milk
- 8 wooden skewers
- 2 chopped spring onions
- 1 tbsp roasted peanuts
Instructions
- 1. Thoroughly wash the mushrooms.
- 2. Trim the stems off the mushrooms.
- 3. Place the mushroom caps into a large bowl.
- 4. Peel the garlic.
- 5. Finely chop the garlic.
- 6. Mix the chopped garlic with ginger, lemongrass, soy sauce, and sesame oil in a small container.
- 7. Pour the garlic marinade over the mushrooms in the bowl.
- 8. Toss the mushrooms well to ensure they are evenly coated with the marinade.
- 9. Let the mushrooms marinate for about 4 hours.
- 10. Turn the mushrooms occasionally during the marinating time to help them absorb the flavors.
- 11. Wash the chili pepper under running water.
- 12. Cut the chili pepper in half lengthwise.
- 13. Remove the seeds from the chili pepper.
- 14. Finely chop the deseeded chili pepper.
- 15. Peel the second garlic clove.
- 16. Finely chop this garlic as well.
- 17. Gently warm the chopped chili and garlic in a pan with the peanut butter.
- 18. Stir in lime juice, soy sauce, and sesame oil into the warm peanut butter mixture.
- 19. Add the coconut milk and stir the sauce until smooth.
- 20. Finally, season the sauce to taste with salt and pepper.
- 21. Remove the marinated mushrooms from the marinade.
- 22. Thread four mushrooms onto each skewer.
- 23. Grill the skewers until golden brown on all sides.
- 24. Brush the skewers occasionally with the remaining marinade while grilling.
- 25. Alternatively, heat some oil in a pan and fry the skewers in it until golden brown.
