  1. 1. Separate the egg so that you have the yolk and white apart. Use a hand blender to chop half of the cashew nuts into fine pieces.
  2. 2. Mix the chopped cashew nuts with the marzipan base, the egg white, the flour, and the powdered sugar. Stir everything together until you have a smooth dough.
  3. 3. Shape the dough into small balls, about the size of a cherry. Then press the balls down slightly to flatten them.
  4. 4. Line a baking sheet with baking paper. Whisk the egg yolk with about one teaspoon of water and brush the flattened balls with this mixture.
  5. 5. Press the remaining cashew nuts firmly into the surface of the balls. Bake the cookies in the preheated oven at 175 degrees Celsius conventional heat (or 150 degrees Celsius fan forced, gas mark 2) on the middle rack for about 15 minutes until golden brown.
  6. 6. Let the finished cashew bethmännchen cool down on a wire rack in the oven.
