🍽️ Thinly Sliced Porcini Carpaccio

Ingredients
- 4 fresh porcini mushrooms
- 2 tbsp cold-pressed olive oil
- 0.5 lemon
- salt
- pepper (from the mill)
- 4 sprigs fresh parsley
- 1 tbsp freshly grated Parmesan (optional)
Instructions
- 1. Rinse the clean mushrooms briefly under cold water and immediately pat them completely dry with a kitchen towel. Then slice the mushrooms as thinly as possible from the cap downwards onto a plate using a vegetable peeler or knife.
- 2. Squeeze the lemon, remove the pulp, and gradually stir the juice into the oil. Carefully drizzle the mushrooms with this mixture. Season everything lightly with salt and pepper. Chop the parsley coarsely and sprinkle it on top.
- 3. Sprinkle the mushrooms with some grated Parmesan cheese if you like.
