🍽️ Fish Cannelloni au Gratin

Ingredients
- 2 slices white bread
- 600 g fish fillet (cod, redfish)
- 1 bunch spring onions
- 0.5 lemon (juice and grated zest)
- 2 tbsp chopped parsley
- 3 tbsp chopped dill
- 1 ball mozzarella (125 g)
- 2 eggs
- salt
- pepper
- nutmeg
- 1 tbsp butter
- 1 heaped tbsp flour
- 500 ml milk
- 250 g cannelloni (no pre-cooking)
- 1 large tomato
Instructions
- 1. Place the white bread in a bowl with lukewarm water.
- 2. Squeeze the soaked bread firmly to remove excess liquid.
- 3. Rinse the fish fillet under running water.
- 4. Pat the fish fillet dry with a kitchen towel.
- 5. Cut the fish fillet into coarse cubes.
- 6. Put the fish fillet and the bread into a blender.
- 7. Puree the ingredients into a fine mixture.
- 8. Peel the spring onions and wash them.
- 9. Slice the spring onions into thin rings.
- 10. Wash the lemon under hot water.
- 11. Cut the mozzarella into small cubes.
- 12. Put the fish mixture into a large mixing bowl.
- 13. Add the spring onion rings to the fish mixture.
- 14. Grate some lemon zest directly into the bowl.
- 15. Squeeze the lemon juice into the bowl.
- 16. Add the chopped herbs to the bowl.
- 17. Add the mozzarella cubes to the bowl.
- 18. Crack the eggs into the bowl.
- 19. Season the mixture with salt.
- 20. Season the mixture with pepper.
- 21. Season the mixture with nutmeg.
- 22. Mix all ingredients well together.
- 23. Melt the butter in a pot.
- 24. Add the flour to the melted butter.
- 25. Stir the flour lightly for a short time (this is called sweating).
- 26. Pour in the milk while stirring constantly.
- 27. Bring the sauce to a brief boil once.
- 28. Let the sauce simmer over medium to low heat for about 10 minutes.
- 29. Season the sauce with salt.
- 30. Season the sauce with pepper.
- 31. Season the sauce with nutmeg.
- 32. Fill the cannelloni with the fish mixture using a teaspoon.
- 33. Place the filled cannelloni side by side in a greased baking dish.
- 34. Wash the tomato.
- 35. Slice the tomato.
- 36. Place the tomato slices on top of the cannelloni.
- 37. Pour the sauce over the cannelloni.
- 38. Preheat the oven to 200 degrees.
- 39. Place the baking dish on the middle rack.
- 40. Bake the cannelloni for 30 to 35 minutes.
- 41. Take the cannelloni out when they are lightly golden brown.
