🍽️ Cannelloni with ricotta and arugula filling, baked with tomato sauce

Ingredients
- 300 g arugula
- salt
- 2 garlic cloves
- 4 tbsp pine nuts
- 250 g ricotta
- 100 g cream cheese
- 100 g freshly grated parmesan
- 2 eggs
- 1 tbsp semolina
- 16 cannelloni
- fat (for the dish)
- 1 small onion
- 20 g butter
- 600 g chopped tomatoes (can)
- 0.5 tsp freshly chopped oregano
- 1 tsp freshly chopped basil
- pepper (from the mill)
- 1 ball mozzarella (125 g)
- 4 tbsp freshly grated parmesan (for sprinkling)
Instructions
- 1. Preheat the oven to 200 degrees Celsius with top and bottom heat.
- 2. Wash the arugula thoroughly.
- 3. Remove any damaged leaves.
- 4. Spin the arugula dry.
- 5. Chop the arugula finely.
- 6. Peel the garlic.
- 7. Toast the pine nuts in a pan without fat.
- 8. Remove the pine nuts from the pan.
- 9. Let the pine nuts cool down.
- 10. Chop the cooled pine nuts finely.
- 11. Mix the ricotta with the cream cheese.
- 12. Add the semolina to the ricotta mixture.
- 13. Add the Parmesan to the ricotta mixture.
- 14. Add the eggs to the ricotta mixture.
- 15. Season the cheese mixture with salt.
- 16. Season the cheese mixture with pepper.
- 17. Press the garlic into the cheese mixture.
- 18. Add the chopped pine nuts to the cheese mixture.
- 19. Add the chopped arugula to the cheese mixture.
- 20. Mix all ingredients for the filling well.
- 21. Fill the cannelloni firmly with the cheese mixture.
- 22. Use a piping bag with a large nozzle for this.
- 23. Butter four baking dishes.
- 24. Place the filled cannelloni in the buttered baking dishes.
- 25. Peel the onion.
- 26. Dice the onion finely.
- 27. Melt the butter in a hot pot.
- 28. Sweat the onion cubes in the butter for about 2 minutes.
- 29. Add the tomatoes to the onion mixture.
- 30. Add the herbs to the tomato-onion mixture.
- 31. Let the sauce simmer for 3-5 minutes.
- 32. Taste the sauce and adjust with salt.
- 33. Taste the sauce and adjust with pepper.
- 34. Pour the sauce over the cannelloni.
- 35. Slice the mozzarella.
- 36. Place the mozzarella slices on the cannelloni.
- 37. Sprinkle the baking dishes with Parmesan.
- 38. Bake the baking dishes in the preheated oven for 35-40 minutes.
- 39. Remove the baking dishes from the oven.
- 40. Serve the cannelloni immediately.
