🥗 Creamy Bean and Tuna Salad

Ingredients
- 1 mild red onion
- 1 handful mixed herbs (e.g. parsley, chives, basil)
- 480 g dried cannellini bean (can)
- 280 g tuna can (in oil)
- 100 g dried soft tomato (dried)
- 0.5 lemon (juice)
- 4 tbsp white balsamic vinegar
- salt
- pepper (from the mill)
- sugar
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Rinse the herbs under cold water.
- 3. Shake the herbs dry and chop the leaves finely.
- 4. Place the beans and tuna in a colander to drain.
- 5. Keep three to four tablespoons of the tuna oil in the can.
- 6. Cut the tomatoes into thin strips.
- 7. Whisk the lemon juice with balsamic vinegar.
- 8. Add the reserved tuna oil to the sauce.
- 9. Season the sauce with salt, pepper, and a pinch of sugar.
- 10. Place the beans, roughly flaked tuna, onions, herbs, and tomatoes in a large bowl.
- 11. Pour the sauce over the ingredients and mix everything well.
- 12. Taste the salad and adjust the seasoning if needed.
- 13. Let the salad sit for at least 30 minutes to allow the flavors to meld.
