🍽️ Crispy Calamari Sandwiches with Orange

Ingredients
- 6 squid tubes
- 1 garlic clove
- 1 handful spinach
- salt
- 1 red bell pepper
- 0.5 unpeeled lemon (zest and juice)
- 2 tbsp olive oil
- 80 g grated hard goat cheese
- 2 tbsp breadcrumbs
- pepper (from the mill)
- 1 baguette
- 1 orange
- 2 handfuls arugula
Instructions
- 1. Rinse the squid under running water.
- 2. Pat the squid dry with a kitchen towel.
- 3. Dice two squid pieces into small cubes.
- 4. Place the squid cubes into a bowl.
- 5. Peel the garlic.
- 6. Finely chop the garlic.
- 7. Wash the spinach.
- 8. Remove the tough stems from the spinach.
- 9. Blanch the spinach briefly in salted water (blanching means cooking briefly in boiling water).
- 10. Shock the spinach immediately with cold water.
- 11. Squeeze the spinach well to remove excess water.
- 12. Chop the spinach finely.
- 13. Wash the bell pepper.
- 14. Cut the bell pepper in half lengthwise.
- 15. Remove the seeds and core from the bell pepper.
- 16. Dice the bell pepper finely.
- 17. Add the garlic, spinach, and pepper to the squid in the bowl.
- 18. Grate the lemon zest.
- 19. Add the lemon zest to the bowl.
- 20. Add one tablespoon of oil to the bowl.
- 21. Add half of the cheese to the bowl.
- 22. Add the breadcrumbs to the bowl.
- 23. Season the mixture with salt and pepper.
- 24. Mix all ingredients thoroughly.
- 25. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 26. Fill the remaining squid tubes with the mixture.
- 27. Secure the squid tubes with toothpicks.
- 28. Place the stuffed squid on a baking sheet lined with baking paper.
- 29. Brush the squid with the remaining oil.
- 30. Season the squid with pepper.
- 31. Sprinkle the remaining cheese over the squid.
- 32. Bake the squid in the oven for about 15 minutes until golden brown.
- 33. Slice the baguette horizontally in half.
- 34. Toast the baguette briefly in the oven.
- 35. Peel the orange thoroughly.
- 36. Cut out the segments from the orange.
- 37. Wash the arugula.
- 38. Remove any damaged leaves from the arugula.
- 39. Spin the arugula dry.
- 40. Cut the baguette into four equal pieces.
- 41. Top the bottom halves of the bread with arugula.
- 42. Top the bread with the orange segments.
- 43. Remove the calamari from the oven.
- 44. Remove the toothpicks from the squid tubes.
- 45. Slice the squid tubes in half lengthwise.
- 46. Place two halves on each baguette piece.
- 47. Put the tops on the sandwiches.
- 48. Serve the sandwiches.
