Ingredients
- 600 g squid tubes
- 100 g flour
- 1 egg yolk
- 0.125 l wine
- salt
- 1 tbsp oil
- 1 egg white
- fat (for deep frying)
- lemon juice
Instructions
- 1. Cut the squid into thick rings. Mix the batter until smooth using flour, egg yolk, one-eighth liter of wine, a pinch of salt, some oil, and the stiffly beaten egg whites. Dip the squid rings one by one into the batter and fry them in hot oil until golden brown and crispy.
- 2. Drizzle the finished rings with fresh lemon juice, sprinkle lightly with salt, and serve with garlic mayonnaise for dipping.
