  1. 1. Cut off the hard crust from the bread if you prefer.
  2. 2. Peel the garlic clove and chop it into very small pieces.
  3. 3. Heat the oil in a large pan.
  4. 4. Place the bread slices into the hot pan.
  5. 5. Fry the slices until golden brown on both sides.
  6. 6. Add the chopped garlic only in the last few minutes so it does not burn.
  7. 7. Remove the tough stems from the romaine lettuce.
  8. 8. Wash the lettuce leaves thoroughly.
  9. 9. Dry the leaves well, preferably using a salad spinner.
  10. 10. Cut the lettuce leaves into strips if you wish.
  11. 11. Mix the lemon juice with salt, pepper, mustard, sugar, and the almonds.
  12. 12. Beat the oil into the mixture with a whisk.
  13. 13. Continue stirring until the dressing is creamy and homogeneous.
  14. 14. Stir the cream into the dressing at the end.
  15. 15. Season the sauce with salt and pepper to taste.
  16. 16. Fill the salad into small bowls.

  18. 18. Grate the Parmesan cheese freshly over the salad.
