🥗 Crispy Caesar Salad with Homemade Croutons

Ingredients
- 12 slices baguette
- 3 garlic cloves
- 4 tbsp vegetable oil
- 1 head romaine lettuce (approx. 500 g)
- 4 tbsp lemon juice
- salt
- pepper (from the mill)
- 1 tsp mustard
- 1 pinch sugar
- 1 tbsp ground almond kernels
- 8 tbsp olive oil
- 4 tbsp whipping cream (at least 30% fat content)
- 50 g Parmesan (in a block)
Instructions
- 1. Cut off the hard crust from the bread if you prefer.
- 2. Peel the garlic clove and chop it into very small pieces.
- 3. Heat the oil in a large pan.
- 4. Place the bread slices into the hot pan.
- 5. Fry the slices until golden brown on both sides.
- 6. Add the chopped garlic only in the last few minutes so it does not burn.
- 7. Remove the tough stems from the romaine lettuce.
- 8. Wash the lettuce leaves thoroughly.
- 9. Dry the leaves well, preferably using a salad spinner.
- 10. Cut the lettuce leaves into strips if you wish.
- 11. Mix the lemon juice with salt, pepper, mustard, sugar, and the almonds.
- 12. Beat the oil into the mixture with a whisk.
- 13. Continue stirring until the dressing is creamy and homogeneous.
- 14. Stir the cream into the dressing at the end.
- 15. Season the sauce with salt and pepper to taste.
- 16. Fill the salad into small bowls.
- 17. Pour the dressing evenly over the salad.
- 18. Grate the Parmesan cheese freshly over the salad.
- 19. Serve the salad together with the crispy bread slices.
