🍽️ Creamy Buttermilk Soup

Ingredients
- 2 tbsp flour
- 200 ml dry white wine
- 1 onion
- 2 tbsp butter
- 200 cream cheese
- 400 ml buttermilk
- 250 ml vegetable broth
- salt
- pepper (from the mill)
Instructions
- 1. Mix the flour with a small splash of wine until you have a smooth, lump-free paste.
- 2. Peel the onion and cut it into very small cubes.
- 3. Heat the butter in a pot.
- 4. Sauté the onion cubes over medium heat until they become soft and translucent (this is called sweating).
- 5. Add the cream cheese and let it melt slowly over low heat.
- 6. Pour the remaining wine into the pot and bring the mixture to a boil.
- 7. Stir the flour-wine paste into the soup while stirring constantly to prevent lumps from forming.
- 8. Now pour in the buttermilk and vegetable broth.
- 9. Bring everything back to a boil, stir well, and let the soup simmer briefly.
- 10. Season the finished soup to taste with salt and coarsely ground black pepper.
- 11. Serve it with whole grain bread spread with herb cream cheese.
