  1. 1. Mix the flour with a small splash of wine until you have a smooth, lump-free paste.
  2. 2. Peel the onion and cut it into very small cubes.
  3. 3. Heat the butter in a pot.
  4. 4. Sauté the onion cubes over medium heat until they become soft and translucent (this is called sweating).
  5. 5. Add the cream cheese and let it melt slowly over low heat.
  6. 6. Pour the remaining wine into the pot and bring the mixture to a boil.
  7. 7. Stir the flour-wine paste into the soup while stirring constantly to prevent lumps from forming.
  8. 8. Now pour in the buttermilk and vegetable broth.
  9. 9. Bring everything back to a boil, stir well, and let the soup simmer briefly.
  10. 10. Season the finished soup to taste with salt and coarsely ground black pepper.
  11. 11. Serve it with whole grain bread spread with herb cream cheese.
