🍳 Fluffy Buttermilk Rolls with Honey-Quark Dip

Ingredients
- 400 g wheat wholemeal flour
- 10 g wheat germ (1 tbsp)
- 1 packet dried yeast
- 1 pinch salt
- 250 ml buttermilk
- 3 tbsp liquid honey
- 1 small organic orange
- 500 g low-fat quark
- 2 tbsp flaxseed oil (20 g)
- 40 g walnut kernels
Instructions
- 1. Put flour, wheat germ, yeast, and a pinch of salt into a large bowl.
- 2. Make a well in the center of the dry ingredients.
- 3. Pour the buttermilk and one tablespoon of honey into the well.
- 4. Mix the ingredients with the dough hooks of a hand mixer until you have a smooth dough.
- 5. Cover the bowl.
- 6. Let the dough rise in a warm place for one hour.
- 7. Rinse the orange under hot water and pat it dry.
- 8. Grate the orange peel finely.
- 9. Squeeze the juice from the orange.
- 10. Stir the quark with the remaining honey, three tablespoons of orange juice, and flaxseed oil.
- 11. Chop the nuts coarsely.
- 12. Roast the nuts in a pan without fat until they are fragrant.
- 13. Let the nuts cool down slightly.
- 14. Fold the orange peel and the nuts into the quark mixture.
- 15. Transfer the quark mixture into a small bowl.
- 16. Divide the dough into eight equal portions.
- 17. Shape the portions into round rolls.
- 18. Cut the surface of the rolls crosswise.
- 19. Place the rolls on a baking sheet lined with baking paper.
- 20. Brush the rolls with cold water.
- 21. Preheat the oven to 200 degrees (convection 180 degrees or gas level 3).
- 22. Bake the rolls for 20 to 25 minutes.
- 23. Remove the rolls from the oven.
- 24. Let the rolls cool down.
- 25. Serve the rolls with the sweet quark.
