  1. 1. Put flour, wheat germ, yeast, and a pinch of salt into a large bowl.
  2. 2. Make a well in the center of the dry ingredients.
  3. 3. Pour the buttermilk and one tablespoon of honey into the well.
  4. 4. Mix the ingredients with the dough hooks of a hand mixer until you have a smooth dough.
  5. 5. Cover the bowl.
  6. 6. Let the dough rise in a warm place for one hour.
  7. 7. Rinse the orange under hot water and pat it dry.
  8. 8. Grate the orange peel finely.
  9. 9. Squeeze the juice from the orange.
  10. 10. Stir the quark with the remaining honey, three tablespoons of orange juice, and flaxseed oil.
  11. 11. Chop the nuts coarsely.
  12. 12. Roast the nuts in a pan without fat until they are fragrant.
  13. 13. Let the nuts cool down slightly.
  14. 14. Fold the orange peel and the nuts into the quark mixture.
  15. 15. Transfer the quark mixture into a small bowl.
  16. 16. Divide the dough into eight equal portions.
  17. 17. Shape the portions into round rolls.
