  2. 2. Whisk the quark in a separate bowl with the buttermilk, sugar, vanilla sugar, and lemon zest.
  3. 3. Gently squeeze the soaked gelatin sheet.
  4. 4. Melt the gelatin sheet over medium heat.
  5. 5. Stir the melted gelatin quickly into the quark mixture.
  6. 6. Place the bowl in the refrigerator until the mixture begins to thicken.
  7. 7. Whip the cream until stiff.
  8. 8. Gently fold the whipped cream into the quark mixture.
  9. 9. Fill the cream into cold rinsed molds.
  10. 10. Place the molds in the refrigerator for two to three hours.
  11. 11. Dip the molds briefly in hot water to release the cream.
  12. 12. Turn the cream out onto plates.
  13. 13. Serve the cream garnished with cherries.
