  1. 1. Soak the gelatin in cold water.
  2. 2. Rinse the lime under hot water and dry it. Grate the zest finely, squeeze out the juice and mix both with the agave syrup and buttermilk.
  3. 3. Warm 2 tablespoons of the buttermilk mixture in a small saucepan. Squeeze out the gelatin and stir it in until dissolved.
  4. 4. Stir the liquid gelatin into the remaining buttermilk mixture with a whisk and chill.
  5. 5. Whip the cream stiff using the beaters of a hand mixer.
  6. 6. As soon as the buttermilk cream starts to set, gently fold in the cream. Fill the cream into 4 glasses and chill for at least 1 hour (preferably 2-3 hours).
  7. 7. Halve the melon and scrape out the seeds with a spoon.
  8. 8. Cut the melon into wedges, remove the rind and cut the flesh into small cubes.
  9. 9. Wash the mint, shake it dry and pluck off the leaves. Set some leaves aside and cut the rest into thin strips.
  10. 10. Mix the mint strips and melon cubes in a bowl and let them sit for a short while. Arrange the mixture on top of the buttermilk lime cream, garnish with the remaining mint and serve.
