🍰 Buttermilk Flaxseed Pudding with Apple Cubes

Ingredients
- 0.5 vanilla pod
- 400 ml buttermilk
- 75 g ground flaxseeds (6 tbsp)
- 1 red apple
- 1 tbsp maple syrup
- 1 tbsp lemon juice
- 1 pinch cinnamon
- 30 g pistachio kernels (2 tbsp)
- 2 tbsp rolled oats
Instructions
- 1. Split the vanilla pod in half lengthwise. Scrape out the tiny black seeds using the tip of a knife.
- 2. Mix the buttermilk with the flaxseeds and the vanilla seeds. Let the mixture stand for about 20 minutes to allow the seeds to swell.
- 3. Divide the pudding mixture among four glasses. Cover the glasses and place them in the refrigerator for 12 hours, preferably overnight.
- 4. Wash the apple, peel it, and cut it into small cubes. Toss the cubes with maple syrup and lemon juice. Chop the pistachios. Top the pudding in the glasses with the apple cubes, pistachios, and oat flakes.
