  1. 1. Dissolve the yeast and half a teaspoon of sugar in the buttermilk.
  2. 2. Add all remaining ingredients to a large mixing bowl.
  3. 3. Pour the yeast milk into the bowl with the ingredients.
  4. 4. Knead the dough using the dough hooks of an electric hand mixer.
  5. 5. Continue working the dough until it is smooth and no longer sticks to the sides of the bowl.
  6. 6. Cover the bowl.
  7. 7. Let the dough rise in a warm place for about 45 minutes.
  8. 8. Lightly dust a work surface with flour.
  9. 9. Knead the risen dough briefly on the floured surface.
  10. 10. Divide the dough into 25 to 30 equal pieces.
  11. 11. Shape the dough pieces into round balls.
  12. 12. Place the dough balls on a baking sheet lined with baking paper.
  13. 13. Let the balls rise again, covered, for 15 minutes.
  14. 14. Whisk the egg yolk with a little milk.
  15. 15. Brush the rolls with the egg yolk and milk mixture.
  16. 16. Preheat the oven to 180 degrees Celsius fan-forced.
  17. 17. Bake the rolls for about 20 minutes until golden brown.
  18. 18. Remove the rolls from the oven.
  19. 19. Let the rolls cool down.
