🍽️ Fluffy Buttermilk Rolls

Ingredients
- 200 ml lukewarm buttermilk
- 20 g fresh yeast (0.5 cube)
- 0.5 tsp sugar
- 60 g liquid butter
- 1 tsp grated lemon zest
- 500 g flour
- 1 tsp salt
- 60 g sugar
- 1 egg
- 1 egg yolk
- 1 tbsp milk
Instructions
- 1. Dissolve the yeast and half a teaspoon of sugar in the buttermilk.
- 2. Add all remaining ingredients to a large mixing bowl.
- 3. Pour the yeast milk into the bowl with the ingredients.
- 4. Knead the dough using the dough hooks of an electric hand mixer.
- 5. Continue working the dough until it is smooth and no longer sticks to the sides of the bowl.
- 6. Cover the bowl.
- 7. Let the dough rise in a warm place for about 45 minutes.
- 8. Lightly dust a work surface with flour.
- 9. Knead the risen dough briefly on the floured surface.
- 10. Divide the dough into 25 to 30 equal pieces.
- 11. Shape the dough pieces into round balls.
- 12. Place the dough balls on a baking sheet lined with baking paper.
- 13. Let the balls rise again, covered, for 15 minutes.
- 14. Whisk the egg yolk with a little milk.
- 15. Brush the rolls with the egg yolk and milk mixture.
- 16. Preheat the oven to 180 degrees Celsius fan-forced.
- 17. Bake the rolls for about 20 minutes until golden brown.
- 18. Remove the rolls from the oven.
- 19. Let the rolls cool down.
