🍰 Lemon Cupcakes with Buttercream

Ingredients
- 150 g Butter
- 150 g Sugar
- 3 Eggs
- 1 untreated Lemon (juice and zest)
- 150 g Flour
- 0.5 tsp Baking Powder
- 75 g soft Butter
- 3 tbsp Powdered Sugar
- 250 g Cream Cheese (plain)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Line the cups of a muffin tin with paper liners.
- 3. Beat the butter with the sugar until creamy.
- 4. Whisk the eggs with the lemon juice.
- 5. Add the egg mixture to the butter mixture along with the flour and baking powder.
- 6. Mix everything well.
- 7. Fill the paper cups with the batter.
- 8. Bake the cupcakes for about 25 minutes until golden brown.
- 9. Remove the cupcakes from the oven.
- 10. Let them cool down completely.
- 11. Beat the butter for the filling with the powdered sugar until white and fluffy.
- 12. Stir in the cream cheese until smooth.
- 13. Fill the cream into a piping bag with a round tip.
- 14. Pipe the cream onto the cooled cupcakes.
- 15. Sprinkle with lemon zest.
- 16. Serve immediately.
