  1. 1. Preheat the oven to 160 degrees Celsius.
  2. 2. Cut the tofu into 8 equal slices.
  3. 3. Fry the tofu slices in hot frying oil until golden yellow.
  4. 4. Place the fried tofu slices on a kitchen towel to drain excess fat.
  5. 5. Cut the mozzarella into 8 thin slices.
  6. 6. Top half of the tofu slices with two mozzarella slices each.
  7. 7. Cover the topped tofu slices with the remaining tofu slices to form small tofu sandwiches.
  8. 8. Place the tofu sandwiches on a baking sheet lined with baking paper.
  9. 9. Bake the tofu sandwiches in the oven for about 10 minutes.
  10. 10. Peel the onion and garlic.
  11. 11. Cut the onion into thin strips.
  12. 12. Chop the garlic finely.
  13. 13. Heat the oil in a pan.
  14. 14. Sauté the onion strips and chopped garlic in the pan.
  15. 15. Season the onion and garlic mixture with salt and pepper.
  16. 16. Slice the tomatoes.
  17. 17. Top the bottom halves of the burger buns with arugula.
  18. 18. Place the baked tofu sandwiches on the arugula.
  19. 19. Cover the tofu sandwiches with the tomato slices.
  20. 20. Distribute the seasoned onion mixture over the tomatoes.
  21. 21. Place the mango slices on top of the onion mixture.
  22. 22. Sprinkle a little pepper over the mango slices.
  23. 23. Cover the burgers with the top halves of the burger buns.
  24. 24. Serve the burgers immediately.
