🥗 Ostrich Burger with Fresh Salad

Ingredients
- 4 buns
- 2 tomatoes
- lettuce leaves
- 4 ostrich steaks (approx. 100 g each)
- 2 tbsp ghee
- salt
- pepper (from the mill)
- 200 g corn (from the can)
- 50 ml broth
- Tabasco
- 2 avocados
- 2 tbsp basil
- lemons
- 150 g mascarpone
- 2 spring onions
- salt
- pepper (from the mill)
- 0.5 tsp cumin (ground)
Instructions
- 1. Slice the buns horizontally.
- 2. Preheat the oven.
- 3. Place the bun halves in the hot oven for a short time to warm them.
- 4. Cut the avocados in half.
- 5. Remove the pits from the avocado halves.
- 6. Scoop out the flesh of the avocados.
- 7. Mix the avocado flesh with the basil.
- 8. Mash the avocado-basil mixture with a fork.
- 9. Stir the lemon juice into the avocado mixture.
- 10. Fold the mascarpone into the avocado mixture.
- 11. Wash the spring onions thoroughly.
- 12. Trim the ends of the spring onions.
- 13. Slice the spring onions into thin rings.
- 14. Fold the onion rings into the avocado cream.
- 15. Season the avocado mixture with salt.
- 16. Season the avocado mixture with pepper.
- 17. Season the avocado mixture with cumin.
- 18. Slice the tomatoes.
- 19. Heat clarified butter in a pan.
- 20. Fry the ostrich steaks in the hot pan.
- 21. Fry the ostrich steaks for about three to four minutes on the first side.
- 22. Turn the ostrich steaks.
- 23. Fry the ostrich steaks for about three to four minutes on the second side.
- 24. Salt the cooked ostrich steaks.
- 25. Pepper the cooked ostrich steaks.
- 26. Remove the ostrich steaks from the pan.
- 27. Keep the ostrich steaks warm.
- 28. Add the drained corn to the remaining frying fat in the pan.
- 29. Pour the broth over the corn in the pan.
- 30. Season the corn-broth mixture with salt.
- 31. Season the corn-broth mixture with pepper.
- 32. Add a few drops of Tabasco sauce to the corn-broth mixture.
- 33. Warm the corn-broth mixture briefly.
- 34. Strain the corn-broth mixture through a sieve.
- 35. Place lettuce leaves on the bottom bun halves.
- 36. Place tomato slices on the lettuce leaves.
- 37. Spread the drained corn over the tomato slices.
- 38. Place the ostrich steaks on the corn.
- 39. Add a dollop of avocado cream to the ostrich steaks.
- 40. Place the top bun halves on the burgers.
