  1. 1. Place the soybeans in a bowl and cover them with plenty of water. Let them soak overnight.
  2. 2. Drain the soaking water. Cook the beans in fresh water for about one and a half hours until they are soft.
  3. 3. Peel the onion and the ginger. Chop both ingredients very finely.
  4. 4. Pour the cooked soybeans into a sieve. Let them drain well.
  5. 5. Crush the drained beans into a fine mass using an immersion blender.
  6. 6. Add the chopped onion, ginger, coriander, and breadcrumbs to the bean mixture.
  7. 7. Stir the egg into the mixture.
  8. 8. Season the mixture with salt and pepper.
  9. 9. If the mixture is too wet, add more breadcrumbs until it is easy to shape.
  10. 10. Shape the mixture into four burger patties.
  11. 11. Heat oil in a grill pan.
  12. 12. Fry the patties in the hot pan for four to five minutes on each side.
  13. 13. Put the red sorrel into boiling water for a short time.
  14. 14. Shake the red sorrel dry.
  15. 15. Put the sprouts into boiling water briefly.
  16. 16. Let the sprouts drain well.
  17. 17. Mix the drained sprouts with the mayonnaise.
  18. 18. Slice the burger buns horizontally in the middle.
  19. 19. Toast the cut sides of the buns until golden brown.
  20. 20. Place the lettuce leaves on the bottom bun halves.
  21. 21. Place the fried soy patties on the lettuce.
  22. 22. Add the sprout mayonnaise on top of the burgers.
  23. 23. Place the top bun halves on.
  24. 24. Serve the burgers immediately.
