🍽️ Soy Patties with Fresh Sprout Cream

Ingredients
- 200 g soybean (dried)
- 1 onion
- 10 g ginger
- 1 tbsp fresh chopped cilantro
- 60 g breadcrumbs
- 1 egg
- salt
- pepper
- 1 tbsp soybean oil
- 2 handfuls sorrel leaves
- 2 handfuls sprouts
- 4 tbsp mayonnaise
- 4 burger buns (optionally with sesame)
Instructions
- 1. Place the soybeans in a bowl and cover them with plenty of water. Let them soak overnight.
- 2. Drain the soaking water. Cook the beans in fresh water for about one and a half hours until they are soft.
- 3. Peel the onion and the ginger. Chop both ingredients very finely.
- 4. Pour the cooked soybeans into a sieve. Let them drain well.
- 5. Crush the drained beans into a fine mass using an immersion blender.
- 6. Add the chopped onion, ginger, coriander, and breadcrumbs to the bean mixture.
- 7. Stir the egg into the mixture.
- 8. Season the mixture with salt and pepper.
- 9. If the mixture is too wet, add more breadcrumbs until it is easy to shape.
- 10. Shape the mixture into four burger patties.
- 11. Heat oil in a grill pan.
- 12. Fry the patties in the hot pan for four to five minutes on each side.
- 13. Put the red sorrel into boiling water for a short time.
- 14. Shake the red sorrel dry.
- 15. Put the sprouts into boiling water briefly.
- 16. Let the sprouts drain well.
- 17. Mix the drained sprouts with the mayonnaise.
- 18. Slice the burger buns horizontally in the middle.
- 19. Toast the cut sides of the buns until golden brown.
- 20. Place the lettuce leaves on the bottom bun halves.
- 21. Place the fried soy patties on the lettuce.
- 22. Add the sprout mayonnaise on top of the burgers.
- 23. Place the top bun halves on.
- 24. Serve the burgers immediately.
