🍽️ Cheese-Stuffed Rice Burgers

Ingredients
- Salt
- 1 Bay leaf
- 350 g Arborio rice
- 1 Sachet Saffron (0.1 g)
- 50 g grated Parmesan
- 2 tbsp Butter
- 3 Eggs
- Pepper (from the mill)
- 200 g Feta
- 2 tsp Paprika powder (sweet)
- 3 tbsp Flour
- 80 g Breadcrumbs
- Vegetable oil (for frying)
- 1 Tomato
- 1 small Onion
- 8 thin Flatbreads
Instructions
- 1. Heat 600 milliliters of salted water with a bay leaf in a pot until it boils.
- 2. Add the rice to the boiling water and let it swell for about 20 minutes over low heat. Stir frequently during this time.
- 3. Dissolve saffron in 2 tablespoons of warm water.
- 4. Stir the saffron solution and the Parmesan into the cooked rice.
- 5. Let the rice mixture cool down briefly.
- 6. Stir the butter and 1 egg into the cooled rice mixture.
- 7. Whisk the remaining eggs in a shallow dish.
- 8. Season the eggs lightly with salt and pepper.
- 9. Cut the cheese into small cubes.
- 10. Mix the cheese cubes with paprika powder.
- 11. Divide the rice mixture into 4 equal portions.
- 12. Flatten each portion of rice.
- 13. Distribute the seasoned cheese cubes onto the rice flats.
- 14. Enclose the cheese filling with the remaining rice mass.
- 15. Shape this into a round patty.
- 16. Roll the patties in the flour so they are completely covered.
- 17. Dip the floured patties into the egg mixture.
- 18. Coat the patties with breadcrumbs as the final step.
- 19. Heat oil in a pan until it is hot.
- 20. Fry the patties in batches in the hot oil.
- 21. Fry the patties for 4 to 5 minutes until they are golden brown.
- 22. Let the finished patties drain on kitchen paper.
- 23. Wash the tomato under running water.
- 24. Halve the tomato and remove the stem base.
- 25. Slice the tomato.
- 26. Peel the onion.
- 27. Slice the onion into thin rings.
- 28. Preheat a grill pan.
- 29. Toast the flatbreads in the hot grill pan.
- 30. Cook the flatbreads until characteristic grill marks are visible.
- 31. Take half of the toasted flatbreads.
- 32. Top these flatbreads with the tomato slices.
- 33. Place the onion rings on the tomatoes.
- 34. Place one rice patty on each topped flatbread.
- 35. Cover the burgers with the remaining flatbreads.
- 36. Serve the finished burgers.
