🍽️ Sourdough Burger Buns

Ingredients
- 20 g wheat sourdough starter
- 140 g whole wheat flour
- 120 g water
- 140 g spelt flour Type 1050
- 0.5 tbsp honey
- 2 eggs
- 2 tbsp soft butter
- 1 tsp salt
- 1 tbsp milk (3.5% fat)
- 2 tbsp white sesame seeds
Instructions
- 1. The evening before, vigorously stir the sourdough starter with the whole wheat flour and 120 grams of water. Cover the bowl and let the dough rise at room temperature for 12 hours (overnight).
- 2. The next day, weigh the spelt flour into a bowl. Add the sourdough, honey, and 1 egg, and knead everything well. Incorporate the butter. Dissolve the salt in 20 grams of water, add it to the dough, and knead for another 10 minutes. Cover the bowl and let the dough rest for 1 hour.
- 3. Divide the dough into 4 equal pieces and shape them into smooth balls. Place them on a baking sheet lined with baking paper and press each ball flat with your hand to about 2 centimeters high. Cover the buns with a clean kitchen towel and let them rise for another 30 to 60 minutes.
- 4. Whisk the remaining egg with 1 tablespoon of milk and brush the burger buns with it. Sprinkle with sesame seeds and bake in the preheated oven at 200 degrees Celsius conventional heat (convection 180 degrees; gas: setting 3) for 15 to 20 minutes until golden brown.
- 5. Remove the buns from the tray while still hot and let them cool on a wire rack.
