🍽️ Colorful Asparagus Gratin with Crispy Topping

Ingredients
- 500 g white asparagus
- 250 g broccoli
- 1 carrot
- 100 g cooked ham (without fat edge)
- 1 tbsp sunflower oil
- 250 ml vegetable broth
- salt
- pepper
- 40 g sour cream (2 tbsp)
- 1 whole wheat baguette roll
- 0.5 lemon
- 30 g chopped pine nuts (2 tbsp)
Instructions
- 1. Wash the asparagus, trim off the woody bottom ends, peel the stalks generously, and cut them into pieces about 3 cm long. Arrange the asparagus pieces in a baking dish.
- 2. Clean the broccoli, wash it, and divide it into small florets. Peel the carrot, wash it, and slice it.
- 3. Dice the ham into small cubes.
- 4. Heat the oil in a pot. Sauté the broccoli and carrot slices in it while stirring. Add 250 ml of vegetable broth. Season with salt and pepper.
- 5. Bring the mixture to a boil once and remove the pot from the heat. Stir in the sour cream and ham cubes, then spread the mixture over the asparagus.
- 6. Crush the bread rolls in a food processor into fine crumbs and place them in a small bowl. Squeeze the lemon and mix 2 tablespoons of lemon juice with the pine nuts into the crumbs.
- 7. Spread the crumb mixture evenly over the asparagus. Bake the gratin in the preheated oven at 200 °C (convection 180 °C; gas mark 3) for about 30 minutes until golden brown.
