  1. 1. Wash the asparagus, trim off the woody bottom ends, peel the stalks generously, and cut them into pieces about 3 cm long. Arrange the asparagus pieces in a baking dish.
  2. 2. Clean the broccoli, wash it, and divide it into small florets. Peel the carrot, wash it, and slice it.
  3. 3. Dice the ham into small cubes.
  4. 4. Heat the oil in a pot. Sauté the broccoli and carrot slices in it while stirring. Add 250 ml of vegetable broth. Season with salt and pepper.
  5. 5. Bring the mixture to a boil once and remove the pot from the heat. Stir in the sour cream and ham cubes, then spread the mixture over the asparagus.
  6. 6. Crush the bread rolls in a food processor into fine crumbs and place them in a small bowl. Squeeze the lemon and mix 2 tablespoons of lemon juice with the pine nuts into the crumbs.
  7. 7. Spread the crumb mixture evenly over the asparagus. Bake the gratin in the preheated oven at 200 °C (convection 180 °C; gas mark 3) for about 30 minutes until golden brown.
