  1. 1. Wash the carrots, peel them if necessary, and cut them in half lengthwise. Peel the shallots and halve them if they are large. Peel the pumpkin and cut the flesh into small cubes. Wash the broccoli, remove the tough stems, and cut it into small florets.
  2. 2. Place the vegetables in a baking dish greased with oil, season with salt and coarsely ground pepper, and mix everything well. Drizzle the vegetables with some oil and lemon juice. Cover the dish tightly with aluminum foil. Bake the vegetables in a preheated oven at 180 degrees for about 35 to 40 minutes.
