🍽️ Colorful Oven Vegetable Mix

Ingredients
- 800 g potatoes
- 400 g carrots
- 400 g parsnips
- 400 g beets (2 beets)
- 3 tbsp olive oil
- salt
- pepper
- 250 g creamy low-fat quark
- 100 g yogurt (1.5 % fat)
- 3 tbsp mineral water (with carbonation)
- 3 tsp mixed herbs (frozen)
- 0.5 lemon
- 1 pinch cane sugar
Instructions
- 1. Wash and peel the potatoes, carrots, parsnips, and beets. Cut everything into wedges or bite-sized pieces. (Wear gloves to keep your hands from getting stained.)
- 2. Place all the vegetables in a large bowl. Toss them with oil and season with salt and pepper. It is best to put the beets in a separate bowl so they do not stain the other vegetables.
- 3. Line a baking sheet with parchment paper. Spread the vegetables on it and bake at 200 °C (convection 180 °C, gas mark 3) on the middle rack for about 25 minutes.
- 4. Meanwhile, mix quark and yogurt in a bowl. Gently fold in the sparkling water and stir in the herbs.
- 5. Squeeze the lemon. Season the herb quark with salt, pepper, sugar, and lemon juice. Place the vegetables on a plate and serve with the quark.
