🍽️ Fresh Zucchini and Tomato Salad

Ingredients
- 2 Zucchini
- 6 Tomatoes
- 250 g Pumpkin (sweet and sour pickled)
- 1 Onion
- 2 tbsp Wine vinegar
- 5 tbsp Vegetable oil
- Salt
- Pepper (from the mill)
- 2 tbsp freshly chopped Parsley
Instructions
- 1. Rinse the zucchini under running water.
- 2. Cut off the tough ends of the zucchini.
- 3. Slice the zucchini into thin rounds or grate it finely.
- 4. Wash the tomatoes thoroughly.
- 5. Cut out the hard stem area of the tomatoes.
- 6. Cut the tomatoes into wedges.
- 7. Drain the pumpkin.
- 8. Reserve 3 to 4 tablespoons of the liquid from the pumpkin.
- 9. Peel the onion.
- 10. Cut the onion into very small dice.
- 11. Whisk the vinegar with the reserved pumpkin liquid.
- 12. Add the oil to the vinegar mixture.
- 13. Season the dressing with salt and pepper to taste.
- 14. Fold in all the prepared salad ingredients into the dressing.
- 15. Serve the salad immediately.
