  1. 1. Rinse the zucchini under running water.
  2. 2. Cut off the tough ends of the zucchini.
  3. 3. Slice the zucchini into thin rounds or grate it finely.
  4. 4. Wash the tomatoes thoroughly.
  5. 5. Cut out the hard stem area of the tomatoes.
  6. 6. Cut the tomatoes into wedges.
  7. 7. Drain the pumpkin.
  8. 8. Reserve 3 to 4 tablespoons of the liquid from the pumpkin.
  9. 9. Peel the onion.
  10. 10. Cut the onion into very small dice.
  11. 11. Whisk the vinegar with the reserved pumpkin liquid.
  12. 12. Add the oil to the vinegar mixture.
  13. 13. Season the dressing with salt and pepper to taste.
  14. 14. Fold in all the prepared salad ingredients into the dressing.
  15. 15. Serve the salad immediately.
