🍽️ Colorful Cabbage Salad

Ingredients
- 400 g small white cabbage (0.5 small white cabbage)
- salt
- 2 tsp hazelnut oil
- 80 g arugula (1 bunch)
- 100 g radishes (1 bunch)
- 0.5 orange
- pepper
- 20 g sliced hazelnut kernels (2 tbsp)
- 70 g smoked chicken (deli meat)
- 40 g sour cream (2 tbsp)
Instructions
- 1. Wash the white cabbage thoroughly, remove the hard core, and cut it into large wedges. Then shred these wedges into fine strips using a vegetable slicer.
- 2. Place the cabbage in a bowl, season with salt, and add the oil. Knead the mixture vigorously by hand for about 10 minutes to soften the cabbage. Then let it rest for 15 minutes.
- 3. Meanwhile, wash the arugula, dry it thoroughly, and remove any thick stems. Set aside a few nice leaves for garnish and chop the rest into small pieces.
- 4. Wash the radishes, remove the stems, and slice them thinly. Mix the slices with the chopped arugula into the prepared white cabbage.
- 5. Squeeze the half orange and measure out exactly 30 milliliters of juice. Add this juice to the cabbage, season with salt and pepper, stir everything well, and let the salad rest for another 15 minutes.
- 6. Roast the hazelnuts in a pan without added fat until golden brown. Cut the sliced meat into thin strips. Mix the nuts and meat with sour cream into the cabbage, adjust the seasoning with salt and pepper, garnish with the reserved arugula leaves, and serve the salad.
