🥗 Colorful Salad with Spicy Chorizo

Ingredients
- 250 g mixed leaf salad (e. g. arugula, dandelion)
- 200 g chorizo
- 8 shallots
- 2 sprigs thyme
- 2 tbsp pine nuts
- 5 tbsp balsamic vinegar
- salt
- pepper (from the mill)
Instructions
- 1. Wash the leaf salad thoroughly.
- 2. Remove wilted or damaged green parts.
- 3. Spin the salad dry.
- 4. Tear the leaves into small, bite-sized pieces.
- 5. Slice the chorizo sausage into thin rounds.
- 6. Peel the shallots.
- 7. Cut the shallots into wedges.
- 8. Pick the thyme leaves off the stems.
- 9. Heat a pan over high heat.
- 10. Fry the chorizo slices for 1 to 2 minutes.
- 11. Add the shallots to the sausage in the pan.
- 12. Fry everything together for about 4 minutes.
- 13. Cook until the ingredients are golden brown.
- 14. Add the thyme leaves at the very end.
- 15. Remove the pan from the heat.
- 16. Divide the salad among four bowls.
- 17. Sprinkle the pine nuts over the salad.
- 18. Top with the fried sausage and shallots.
- 19. Drizzle everything with balsamic vinegar.
- 20. Season the dish lightly with salt.
- 21. Season the dish lightly with pepper.
- 22. Serve the dish immediately.
