🥗 Colorful Salad with Smoked Mackerel and Potatoes

Ingredients
- 2 small zucchini
- 16 small boiled potatoes (from the day before)
- 100 g mixed salad leaves (to your liking)
- 3 stalks parsley
- 2 stalks tarragon
- 400 g smoked mackerel
- 1 stalk basil
- 5 tbsp white wine vinegar
- 3 tbsp olive oil
- 2 tbsp vegetable broth
- salt
- pepper
Instructions
- 1. Wash the zucchini thoroughly.
- 2. Trim the hard ends off the zucchini.
- 3. Cut the zucchini into diagonal slices about 2 cm thick.
- 4. Boil the zucchini slices in salted water for 2 minutes.
- 5. Drain the water.
- 6. Rinse the zucchini immediately with ice-cold water to stop the cooking process.
- 7. Halve the potatoes.
- 8. Wash the salad leaves.
- 9. Shake the salad leaves dry.
- 10. Tear the salad leaves into bite-sized pieces if necessary.
- 11. Wash the herbs.
- 12. Shake the herbs dry.
- 13. Tear the herbs into smaller pieces.
- 14. Flake the smoked mackerel into bite-sized pieces.
- 15. Wash the basil.
- 16. Shake the basil dry.
- 17. Finely chop the basil leaves.
- 18. Mix the chopped basil leaves with the remaining ingredients for the dressing.
- 19. Gently fold the remaining salad ingredients into the dressing mixture.
- 20. Divide the salad onto 4 plates.
- 21. Serve the salad.
