  2. 2. Shake the greens dry.
  3. 3. Tear the leaves into bite-sized pieces.
  4. 4. Wash the tomatoes.
  5. 5. Slice the tomatoes into rounds or quarters.
  6. 6. Peel the onion.
  7. 7. Slice the onion into thin rings.
  8. 8. Place the prepared vegetables on one side of a large plate.
  9. 9. Mix vinegar, oil, mustard, salt, and pepper in a small bowl.
  10. 10. Preheat the oven to 200 degrees Celsius (top heat).
  11. 11. Heat a little olive oil in a pan.
  12. 12. Toast the bread slices in the pan until golden brown.
  13. 13. Place the Crottin de Chavignol (a soft goat cheese) in an ovenproof dish.
  14. 14. Bake the cheese in the preheated oven for 7 to 8 minutes until golden.
  15. 15. Remove the warm cheese from the oven.

  17. 17. Place the crostini next to the salad on the plate.
