  7. 7. Slice the cucumbers into thin rounds.
  8. 8. Wash the apple thoroughly.
  9. 9. Cut the apple into four quarters.
  10. 10. Remove the core from the apple quarters.
  11. 11. Dice the apple flesh into small cubes.
  12. 12. Trim the spring onions.
  13. 13. Cut off the tough ends of the spring onions.
  14. 14. Slice the spring onions into thin rings.
  15. 15. Place all prepared ingredients into a large bowl.
  16. 16. Toss the ingredients in the bowl to mix them well.
  17. 17. Add vinegar, oil, mustard, salt, and pepper to a small bowl.
  18. 18. Add two tablespoons of the brine from the cucumber jar.
  19. 19. Whisk the dressing ingredients vigorously together.
  20. 20. Pour the dressing over the salad.
  21. 21. Toss the salad so that the dressing is evenly distributed.
