🥗 Colorful Salad with Blood Sausage

Ingredients
- 250 g boiled sausage (Regensburger, Lyoner... )
- 250 g thin smoked blood sausage (smoked blood sausage)
- 0.5 bunch radishes
- 2 pickles
- 2 tbsp pickle brine
- 0.5 bunch spring onions
- 1 tart apple
- 4 tbsp mild white wine vinegar
- 1 tsp hot mustard
- 6 tbsp neutral vegetable oil
- salt
- pepper (from the mill)
- 2 tbsp chive rings
Instructions
- 1. Peel the skin off the blood sausages.
- 2. Slice the sausages into thin rounds.
- 3. Wash the radishes thoroughly.
- 4. Trim the stem ends off the radishes.
- 5. Cut the radishes into eight equal wedges.
- 6. Drain the cucumbers well.
- 7. Slice the cucumbers into thin rounds.
- 8. Wash the apple thoroughly.
- 9. Cut the apple into four quarters.
- 10. Remove the core from the apple quarters.
- 11. Dice the apple flesh into small cubes.
- 12. Trim the spring onions.
- 13. Cut off the tough ends of the spring onions.
- 14. Slice the spring onions into thin rings.
- 15. Place all prepared ingredients into a large bowl.
- 16. Toss the ingredients in the bowl to mix them well.
- 17. Add vinegar, oil, mustard, salt, and pepper to a small bowl.
- 18. Add two tablespoons of the brine from the cucumber jar.
- 19. Whisk the dressing ingredients vigorously together.
- 20. Pour the dressing over the salad.
- 21. Toss the salad so that the dressing is evenly distributed.
- 22. Cover the bowl.
- 23. Let the salad marinate for about 45 minutes.
- 24. Take the salad out of the refrigerator.
- 25. Finely chop fresh chives.
- 26. Serve the salad garnished with the chives.
