  1. 1. Wash the radish thoroughly and grate it into thin slices. Place the slices in a bowl, salt them generously, and let them sit for a moment to release the water.
  2. 2. Wash the radishes, remove the stems, and halve them lengthwise. Wash the cabbage, remove the tough cores, and cut it into thin long strips. Cut the watercress from the bed. Wash the dill, shake it dry, and pluck off the fine tips.
  3. 3. Drain the water from the radish and arrange it on four plates together with the radishes, cabbage, and herbs. Whisk the vinegar with the oil and pour the mixture over the salad. Season with salt and sprinkle with peppercorns.
