🥗 Colorful Carrot Salad

Ingredients
- 400 g colorful carrots
- 1 apple
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- salt
- pepper
- 0.5 bunch chives (10 g)
- 60 g goat cheese (45 % fat in dry matter)
Instructions
- 1. Peel the carrots, wash them, and slice them into long, thin strips using a vegetable peeler. Wash the apple, cut it in half, remove the core, and slice it thinly.
- 2. Whisk together the dressing by mixing the oil, vinegar, honey, salt, and pepper well. Pour the dressing over the carrot strips and apple slices and toss everything to combine.
- 3. Wash the chives, shake off excess water, and slice them into small rings. Crumble the goat cheese into small pieces. Sprinkle the chives and goat cheese over the salad just before serving.
