🍽️ Colorful Lentil Salad with Smoked Mackerel

Ingredients
- 300 g brown lentils
- 400 ml vegetable broth
- 1 stalk leek
- 2 carrots
- 0.5 bunch dill (approx. 15 g)
- 2 tbsp dark balsamic vinegar
- 3 tbsp olive oil
- salt
- pepper (from the mill)
- 400 g smoked mackerel fillet
Instructions
- 1. Place the lentils in a bowl with cold water overnight.
- 2. Drain the soaking water the next day.
- 3. Add the lentils to a pot with boiling vegetable broth.
- 4. Simmer the lentils covered on low heat for about 30 minutes until soft.
- 5. Cut the leek in half lengthwise.
- 6. Wash the leek thoroughly.
- 7. Shake the leek dry.
- 8. Remove the tough ends from the leek.
- 9. Slice the leek into thin rings.
- 10. Peel the carrots.
- 11. Dice the carrots finely.
- 12. Wash the dill.
- 13. Shake the dill dry.
- 14. Pick off the delicate dill tips.
- 15. Mix the cooked lentils with the leek and carrots.
- 16. Season the salad with vinegar, oil, salt, and pepper to your taste.
- 17. Flake the smoked mackerel into bite-sized pieces.
- 18. Divide the lentil salad among several plates.
- 19. Place the mackerel pieces on top of the salad.
- 20. Garnish the dish with the dill tips.
